our story
About Us
French-inspired pastries, made by hand in small batches.
The Piquant Patisserie is a pastry truck parked at 801 Chestnut St in San Marcos. The truck is new. The baking isn’t. Krysta has been making cakes since 2012. She started at home and spent more than ten years in commercial kitchens. In 2026, she bought the truck.
Everything starts with French technique, and then it gets a Southern or Texas twist. As she puts it, “My favorite thing to do is to add a southern or Texas twist to my favorite French desserts!” That’s how a salted dulce de leche quad leches ends up in the case next to a classic crème brûlée.
We’re small on purpose. Things sell out, and Krysta still makes everything herself. Profit from the truck goes back into growing the business and, eventually, creating jobs here in town. Follow @thepiquantpatisserie on Instagram for news from the truck.
Meet the pastry chef
Krysta Marie Jeffrey
Krysta is a local. She graduated from Lehman High School in Kyle in 2011. She studied patisserie and baking at Le Cordon Bleu. She learned the rest on the job and at home in her own kitchen. She’s quick to tell people that culinary school isn’t the only way in.
She makes everything on our menu, the custom wedding and shower cakes, and the dessert tables for parties and events.
When she isn’t baking, she’s usually thinking about what to bake next. In her words, “I dream in pastries.”
